The name “gyro,” meaning “to turn,” in Greek, reflects its unique cooking method. Though grilling meat on skewers dates back to ancient Mediterranean civilizations, the modern gyro arrived in the U.S. in 1965, introduced at the Parkview Restaurant in Chicago, where it quickly gained popularity. The demand for gyros grew so rapidly that many restaurants began offering them as an alternative to hamburgers. Today, Americans consume over 300,000 gyros daily, making it a staple of Greek cuisine in the U.S.

Souvlaki

Souvlaki is a popular Greek dish consisting of small pieces of meat, often pork, chicken, lamb, or steak, skewered and grilled over an open flame. The name souvlaki comes from the Greek word souvla, meaning "skewer." Its origins date back to ancient Greece, with evidence of meat being cooked on skewers found over 4,000 years ago.

In modern Greek cuisine, souvlaki is commonly served in various ways—on a skewer as a quick street food, wrapped in pita with toppings like tomatoes, onions, and tzatziki, or plated with sides such as rice, fries, roasted potatoes, and salad. It remains a staple in Greek taverns and street food stalls, enjoyed for its simplicity, flavor, and versatility.
